Braised Pork Tripe with Vinegar Recipe

Pork belly, 3 pieces
Ginger, several slices


Old brine, 1 portion


Light soy sauce, 1 bowl


Sugar, 60 grams


Bay leaves, appropriate amount


Cloves, 10 pieces


Flour, 1 portion


Ingredients:


1. Prepare 1 portion of flour.


2. Prepare 1 bowl of vinegar.


3. Prepare 1 portion of aged brine, 1 bowl of light soy sauce, and 60 grams of sugar.


4. Slice a few pieces of ginger into large slices, add an appropriate amount of bay leaves, and 10 cloves.


5. Prepare 3 pieces of pork tripe.



Instructions:


6. Place the pork tripe into a basin.


7. Add the vinegar and flour to the basin.


8. Use your hands to rub and clean the pork tripe both inside and out with the vinegar and flour mixture.


9. Rinse the cleaned pork tripe thoroughly under running water.


10. After rinsing, remove excess fat from the inside of the tripe.
11. Bring water to a boil in a pot.


12. After the water boils, add the pork tripe and cook for 10 minutes.


13. Transfer the cooked pork tripe into cold water to cool, then rinse thoroughly.


14. Place the pork tripe back into the pot.


15. Add all the spices into the pot.


16. Add the reserved marinade, light soy sauce, and sugar into the pot.


17. Pour two bowls of water into the pot, then turn on the heat.


18. Once boiling, cook over high heat for 15 minutes, then reduce to low heat and braise for 3 hours.


19. Frequently turn the pork tripe in the pot to ensure even coloring.


20. After 3 hours of braising, turn off the heat. Let the pork tripe soak in the marinade for one night to enhance its flavor.
